Green Light, Red Light – How Cafeterias Can Use Traffic Lights to Promote Healthier Choices

The Massachusetts State Hospital found that by simply labeling the options in its cafeteria with red, yellow and green labels (red being most unhealthy, green the most healthy) that employees’ choices of green-labeled items increased by 12 percent! And not surprisingly, people’s choice of red-labeled items decreased by 20 percent.
